I have one of those Igloo 72qt extreme coolers that I have been using just fine. My question is there is a lot of room left over if I use the 1.33qt/lb ratio. Most of my brews are around 17lb so that is only a little over 4g of strike water. then I add the rest of the sparge water to get to my target 13.5g boil size.

Can I add more water for the initial mash?

Those of us who brew in a bag can use the entire amount of water at mash in but we can squeeze the bag of grain to get more of the sugars out. You cannot squeeze so you need some sparge water to help your efficiency. You'll have to decide how little sparge water you can get by with or whether you are willing to boil down a large amount of excess water.
