So I left a 10-pound bag of 2-row pale malt in my car, which is outside in Chicago, where the temp gets below freezing at night. Is there any reason for me to be concerned about the temp having a negative affecting on the grains?

Pretty much the only things that degregate grains are moisture, oxygen, and bugs. Keep those three away from the grain, and it'll stay good almost indefinitely.

Cold temps generally will help keep those items out your grain.
