Well this weekend I am planing on brewing my rendition of a Sierra Nevada Ruthless Rye. I generally do a single temp infusion for the ales I brew, however I did some math an almost 48% of the grain bill is speciality malts/Adjuncts, so I was wondering if a multiple step mash schedule would be more appropriate. Let me know what you think:D

Here is the ingredients so far:

16 lbs 2-row
6 lbs Crystal 20
6 lbs Rye Malt
1.8 lbs Chocolate Malt
.8 lbs Flaked Barley
2 OZ Apollo @ 60 min
1 OZ Chinook @ 15 Min
1 OZ Centennial @ 10 Min
2 Pkg WLP090 Sand Dog Super yeast

Dry Hop Schedule

1 OZ Centennial @ 7 Days
1 OZ Chinook @ 7 Days
1 OZ Citra @ 7 Days

Mash Schedule

154 Deg F for 60 Min

Any input would be great!!

I'd bring that c20 way down to maybe a lb and drop the rye to 3-4lbs. Choc to a few ounces.

I agree on the C20 but the rye can stay and with that much cocolate it would be more like a porter. Do you ever go to the Cask meetings here in Jax?

Thanks guys I will make some adjustments to the recipe:) @ashplub I am in the Navy and not in JAX currently, however I should be around the end of the year. Once I get back I plan on attending:)
