Hello! Newbie question -
I did an all-grain batch last night, and when I got the boil going, realized my water level was a little low. I was out of bottled, and the municipal supply isn't great.

Can I add (distilled) water during or after fermentation? say add a half gallon to the bottling bucket and let it mix as it transfers?

Yes, you can use distilled except for the mash where you need mineral content. Add it before fermentation starts if you can.

Yeah, you can. If it's just taking off though, I would add it now. Just make sure the water isn't super cold so you don't shock the yeast. Room temp would be fine.
