I'm looking at a grain mill some time in my future. My LHBS stocks the Schmidling Malt Mill, the non-adjustable one, which has the crush set at 0.040". Is there a real advantage to getting the adjustable one? My guy can order one for me, that's not a problem. But is there a compelling reason to do so?

Adjustability is important to me. Different grains can be different sizes. What if you want to mill some wheat?
 
I'm leaning toward the adjustable. I like having more control over things, and for the few extra bucks it'll cost, I think it'll be worth it, for me at least.
