Insulated Sheathing question

I want to make a fermentation chamber using a mini fridge, plywood and insulated sheathing. I want to make it as clean and nice as possible, but without spending too much money. At my local lowes they have many choices for insulated sheathing but I don't know how thick it needs to be. Here is what they have:

It's too hot and annoying to keep changing ice everyday! Thanks for the advice.
 
More insulation = less ice changing. I would get the thickest and highest R value sheets you can fit/afford.
 
I was thinking of using the mini fridge idea, not a son of sam thing if that makes a difference.
