If you like ginger ale I've had a lot of success with this quick and easy extract one. Very refreshing and I tend to drink too many during a "session."

FG: 1.008
ABV: 3.6%
Specialty Grains: (Steep @ 154F in 1.25 qts for 30 min)
.5 Lb -- Crystal 40L
.5 Lb -- Honey Malt
Fermentables:
3 Lbs -- Extra Light DME
1 Lb -- Amber DME
Hops:
0.25 oz -- Citra (12% AA) 30 min
0.25 oz -- Citra 15 min
0.50 oz -- Citra Dry Hop 14 days
Other:
4 oz Fresh, peeled Ginger Root; sliced thin (I use a mandolin)
----- 4 oz of Ginger makes it pretty spicy (which I like); use 2-3 oz for more subtle flavor
----- Add the ginger at the beginning of the boil and strain it out before pitching.
Yeast:
1 pkg -- Safale American US-05; Rehydrate per package
Primary 7 days; Secondary 14 days (Dry hop); Condition 3-4 weeks with 4.5 oz corn sugar (2.6 vol).
