I just used vial ale yeast instead of the packaged yeast because that was all that was offered at the brew store. So after chilling the wort, adding it to the fermenter with water I added the vial ale yeast. After about 18hrs the brew had clumpy curdling stuff in it. Doesn't look right and this is the first time I have used this vial yeast. Anyone have any insight or recommendations?
