    German Wheat Beer

:mug:Going to get ingredients for an ale I brewed a long time ago. I'm making an 8 GALLON batch. I've tried to replicate this a few times but could not find the same yeast at my LBHS. They have it in stock now so I'll try again. Here is the recipe for an 8 GALLON brew. 11# Wheat LME 1#...

2 packs of Nottinghams...... kinda scary

:mug:I'm brewing an 8 gal. batch in about a 9 1/2 gal. fermenter. I'm definitely using a blow off tube. After reading some threads talk about using a strong amount of yeast, I'm going with 2 packs of Nottinghams. Well every ferment is different so I'll be covering this bad boy up with a blanket...

    New tweak to old stout

    -Ninkasi Brewery

:mug:Had a big write up in the local Eugene OR paper about the Ninkasi Brewery. I'm definitely checking out their tasting room. I've tried most of their brews anyways but, just got to go see it. They are a brewery only, no pub or food I guess. I think we will be trying to clone their beers soon...

    Aging versus Quickly maturing Beers

Title from the Joy of Home Brewing, page 36. I aged my first home brew( an ale) for 2 weeks which is what Charlie says will be ready to bottle. A lot of people told me you need to "condition" my beer for longer, say a month. I would say that my first brew was just as good just bottling after 2...

    Ending my drought...

:mug:Going to day to pick up enough ingredients to brew a 8 gal batch. Been layed off for a couple months, but got offered a new position for the same company and a little more salary. Now if it will just last a while (like about 11 more years) I'll retire and become my own full time brewer. I...

    Ethanol adds problems?

:mug:Went to "happy hour" last night and got into conversation about the gas crisis. Buddy told me that here in Oregon, they have been adding 15% ethanol to all the gasoline since April. Then said he was told that this gas will break down like rubber things and such that we will start having...

    Is G.W. Bush the worst?

 I mean, what has he done exactly that has been good for our country? He's cut taxes for the not so ordinary people( over $100,000 per year). Got us into a war on false pretenses. Done a minimal amount while the country has already dropped into a recession. Gee, I hope this economic...

    Michelob craft beers

:mug: Anybody tried the new brews from Michelob? I really have not seen any of them but the trusty Amber Bock. Michelob is actually what I drink during my happy hour spent at the bar as they always have the bottles in a ice chest for the happy hour crowd.:mug:

    Global Warming? Crazy weather here.

:mug: One week ago, it was 80 degrees, this morning I wake up and it is 32 degrees and snowing. This does not happen in Western Oregon. We are only a couple of weeks from putting in our gardens. Got about an 1 or so on the Willamette Valley floor. Oh well, time to throw snow balls!:ban: :mug:

    How much headspace is necessary?

:mug: I'm trying to maximize my primary fermenter. It's actually an tun and even with 8 gals. I still about 2" of headspace. I definitely use a blowoff tube every batch. I guess I'll keep experimenting til I make a mess! Keep SWMBO happy! I pretty much have tubs and buckets to contain mess as...

    WORST Non-homebrew you've had!

:mug: Well I think you can remember these easier than you can the many that you have enjoyed! In no particular order: Corona-havent' drank one that wasn't skunked Beamish Irish Stout-cheap boilermaker? Some Pineapple Hefe from Hawaii-yuck I've drank some that are pushing my hops...

    Walking Man Clones??

[[/URL]:mug: Anybody tried to clone any of the brews from Walking Man Brewery. I got to try a Black Cherry Stout that was as good of a brew with fruit (against "Man Rules") that I have ever liked. Check out the link. Looks like most of their brews are BIG. :mug: :tank...
