    No yeast for a week. Is it ruined?

    It should be fine. Only way to know for sure is take a reading. Can you see any krausen at all? I'd be shocked if properly sanitized yeast wouldn't ferment beer just from a little nap at 50 deg.

    Help with the pros/cons of sanitizing agents

    +1 for starsan. I have a spray bottle of starsan and distilled water which is good for years. Great product.

    Pitch the whole pack?

    Yeast washing/rinsing is such a money saver, especially if you plan to use the same yeast type. Check YouTube, there's some great videos and it's really simple to do.

    My First Born.

    I'm always impressed and a little confused when people jump right in with an all-grain brew. Just curious - why did you skip extract? Either way, that's really impressive. Congrats and if I have one piece of advice - brew again ASAP to build your pipeline!

    Pitch the whole pack?

    I'd pitch it all. I always double pitch dry yeast for anything over 1.060 in a full batch, so pitching the whole pack for a half-batch is a good idea.
