I make pork butt all the time. Honestly I think it impossible to not have it come out perfect. About 1 hour per pound. I stopped worrying about mopping, just don't touch it. Keep it low and keep the smoke going.

I have had many beers from this brewery, not this one though. I will visit that brewery this year. My cousin lives near it.

Have you learned about fractional derivatives? I never seen it applied but maybe you have. Its used mostly with fluids.
