    Been there, I get you buddy! Turns out that my problem was ****ty hops! Yup, got some batches from the same supplyer which must not have been stored properly. I've changed suppliyer and my problem went away!

    Anyone Just "No Sparge"

    I'm doing a no sparge BIAB on my stove top during winter. I gest consistent 76-77 efficiency by doing a 10min mashout @ 167 degress for 10 minutes. Why would I ever want to sparge or even use a mash tun!

    final gravity too high?

    19 is very very sweet indeed for a 55 wort. I'd go with a fresh pitch of yeast to get a couple points down. With 1 packet of rehydrated US04 you could probably shave 4-5 points out of that. IMO, this would bring your porter to an optimal FG. enjoy the beer :D

    Absolutely! It is slightly less fermentable thought so you might want to up the qty a little bit. My 2c; it won't have any impact on flavour and simple sugar (dextose etc etc) will be easier for the tired yeast cells to convert. Enjoy!

    It has probably more to do with the temperature at which you have fermented the beer... It should mellow a little bit in a month though.

    If she feels that way after 10 yrs together, you're probably past the "sit down and talk together". It'll fix things for a couple of months but the situation will come back. I'd go with couple counseling ASAP. I sincerely hope you two guys will find what is needed to get thing fixed.

    Never been so discouraged about homebrew (need some encouragement)

    Have you tried to use carbon filtered tap water? What sanitizer du you use? How do you store your grains and hops? Maybe if you walk us through an entire brew with every step detailed, we'd be able to give you some hints. I hope your brewing gets to you taste soon :D

    Infection is quite probable. If a bacteria is in there, it'll slowly eat the sugars that your yeast could not process. In the long run, this could result in too much carbonation, a beer way too dry and off flavours. If you're lucky, only a couple of bottle could be affectec from improper...

    Go ahead and build your own by all means! The biggest issue is to make sure not to kink the copper tubing and from what I understand, it is very unlikely to happen to you!
