    Jalapeño Beer?

I took a gallon of an apricot wheat to make a jalapeno beer and I really enjoyed it. The sweetness of the apricot paired well with it. It was however too hot for most people. I added 3 roasted peppers for 1 gallon for 1 week and also had to cut them in half to get them in so the membrane was...

    Too Much Head Space?

Is it the surface area that matters or the total volume of oxygen in the head space that we need to be concerned with? I just bought some 1 gallon glass jars to use as secondary containers because they were about half the price of growler type jugs. I fill them about as much as I can without...

    Yeast nutrient/rehydration question

Actually, in the FAQ sticky thread it states to add the nutrients and then pitch the rehydrated yeast as well. I am confused. Is it ok in this instance because it will be more diluted than it will be when rehydrating?

    Bray's One Month Mead

Thanks, I read through the thread, but I must have overlooked that. I want to drink nothing but the best mead as well and just wanted to have a batch ready by Christmas (poor planning on my part). The closest HBS that has this yeast is not worth the drive or the $8 on top of the price of the...

    Yeast nutrient/rehydration question

Ok thanks, that makes sense. So there should not be any nutrients added until the fermentation starts? There are several recipes floating around that mention adding the nutrients prior to pitching. What you are saying is that this practice is incorrect and should be avoided?

    Yeast nutrient/rehydration question

I recently read on the mead faq sticky that you should only use go ferm during the rehydration and not yeast nutrient or energizer. I started my first batch last week and did just that (rehydrated with yeast energizer). Can anyone explain to me why this should not be done? My reasoning was that...

    Bray's One Month Mead

You mentioned a Belgian yeast experiment so I thought you might know of others that would work. Sorry for wasting your time....

    Bray's One Month Mead

Is there another yeast that would work as well as Wyeast 1388? My LHBS doesn't have it or the WL equivalent (Belgian golden). Is there any others that you have played around with that you could recommend? Thanks

    Bray's One Month Mead

As far as the quantity..... I went with the whole pack. I tried to look it up but the opinions seemed to vary quite drastically. I hope that is ok. Are you sure it will take that long? I went with this yeast because the write up said the fermentation was fast and peaked at under 10 days at...

    Bray's One Month Mead

I am going to try a 1 gallon batch of this tonight, but with ec1118. I listened to a podcast recently that suggested 1 g per gallon. Is that enough? Should I divide the pack up or use it all?

Replacing the Temperature Controller on my Freezer

I did the same thing with mine, but I haven't added a nice plate like yours (haven't got to it yet). The temp controller is just hanging out in the opening for now. The only problem that I have without the added heat source is that sometimes it gets too cold when I am lagering. If the temp is...

    Help--Electric BIAB Temp Controller suggestions

You should check in Pj's diagram thread. You will find what you need there to build one for cheaper than what you will find pre-fabed. That is the way to go really if you have the resources to do it. I am pretty sure there is a biab pid build diagram in the first or second post that pretty much...

Doing SMaSH beers has definitely helped me to understand the different flavors that grains and hops contribute to beer and in turn has helped in formulating recipes...

    Star san safe?

Ideally you let it dry. Those are Jon Herkovits' (ceo of starsan) words not mine. Especially with stainless, it helps to repassivate the metal when needed...

    Star san safe?

I am sure this was probably explained in the very same podcast. I think it is a great product, but if anyone really has any concerns about it in or on your equipment, simply let it drain/dry thoroughly before using...

    Star san safe?

The wort will raise the ph level high enough so that the starsan is null and void. The yeast actually end up using it for food eventually...

Stone Enjoy By...how'd they do it?

Sorry, I left out that detail. He said the exact same thing in the the podcast. Two additions to the wort only dialed down on the bittering and way up in the whirlpool, then dry hop the hell out of it...
