Why not just brew and age a porter and another favorite beer that would be pair with oak. After a couple of rounds of oaking (3-6 months) the barrel will be neutral and you can use it for souring.

I just picked-up one of these. As advertised. Pick up an O2 canister at HD, sanitize the wand, insert into fermenter, turn on for 30", and you're good to go. Super easy compared to sloshing around a carboy for several minutes.

Pretty typical of a long primary. I find the crap leftover on the sides of the pale after high krausen seems to sour. Doesn't affect the beer though. So, if it tastes good, you're good to go. I'd just be careful during racking not to slosh (good idea anyway), and if you're harvesting yeast...
