    Porter recipe - comments?

Can I get some suggestions from porter veterans? A number of years ago I made a batch of porter for a friend of mine. It was heavy on extract, but now I'm brewing all-grain. I converted the LME based on what Briess says goes into their Traditional Dark LME, and the result didn't seem right...

    Cardamom-Lemon Wit beer

I have made plenty of wits using different recipes (and occasionally even following them!), but I had some cookies over Christmas spiced with cardamom and figured that would make an interesting wit. I have read a lot of cardamom horror stories and know to go very lightly with the stuff; it...

    Use for junk kegs?

While cleaning and reconditioning our supply of used kegs yesterday, we found that one of them will not seal up. Apparently while being shipped some banding squeezed the top of the keg, and the opening is now not the right shape. The long dimension is now slightly shorter and the short...

Unbittered "beer" (or, I apparently enjoy drinking starters)

Before I get run off HBT, let me preface this with by saying I have apparently done an experiment and am not advocating blasphemy. I made a starter 9 days ago using enough extra-light DME to hit 1.050, and pitched in a pack of Belgian Strong Ale yeast. I decanted off most of it and pitched...

    Alternate use for half barrels

I bought four half-barrels about a year ago (right at the height of scrap metal prices :( ) to convert to keggles. Unfortunately circumstances have prevented this. I have been reduced to using my half-barrels in place of jackstands. On the bright side, my lawn mower is fully winterized.

    When Yeast Attacks!

I'll be brewing on Saturday so I thought tonight would be a good time for starters. I had some bottles of Fat Tire yeast slurry saved in the fridge for about a year, and apparently when you keep them in an icy prison for 14 months they get a little hacked off. When I was ready to pitch them...

    What style is this?

Last fall we were running sort of low on inspiration for new beers, and had leftover ingredients in the fridge, and I had picked some hops off the new plants. We came up with a recipe and I'm drinking it now. We were hoping to showcase the hops and keep it pretty easy drinking. It's a little...

    Beer for your own funeral?

I mean no disrespect to anyone who's recently been through the loss of a loved one. That doesn't mean I'm not going to make a *little* light of the situation, though. Tonight I was bottling a batch of beer with my dad, who sells insurance, and I mentioned the fact that I'm probably...

    Saving commercial keg beer

I attended a party this weekend that, while fun, was pretty weak in the beer-drinking department. Gedvondur and I volunteered to rescue the remnants from the half-barrel of New Glarus Spotted Cow as to not let it go to waste. We ended up filling 2 1/2 5-gallon cornies out of the half-barrel...
