My Brewday: Brewing an Altbier for December

Awesome, love the pics. I'd like to brew an altbier soon. Care to share the recipe?

Got no head retention or hop quality in my IPA. Why?

Did you bottle it with no (or too little) priming sugar?

    Grapefruit flavor in my IPAs!

Could it possibly be a water chemistry issue? I ask because I truly don't know the answer.

Vanilla Oaked Traditional Porter - Please Critique!

+2 on too much oak, especially if you are only oaking half the batch!

Just Picked Fresh Cascade - Recipe Ideas

JFYI - If you are not brewing until Monday, the hops you've already picked will need to be dried. Wet hops need to be used within 48 hours of being picked. But I second the notion of using the fresh hops at the end of the boil, not for bittering. Go with high AA pellets or dried cones. Columbus...

    Really cheap wort chilling idea?

Wow, that's a very clever idea. Did you throw them in right after flameout, or wait until it cooled a bit?

Anybody know when Hopville will be functioning again?

Ah, must've been an issue with IE. It's working on Firefox. Looks good, too! Thanks y'all.

Anybody know when Hopville will be functioning again?

It's been kaput for a few days now. I know they had a message that it would be down last weekend, but it's still down.

Anyone ever have a great blueberry ale?

Dark Horse Tres Blueberry Stout is by far the best blueberry ale I've tasted. You'd probably have to do a trade to get it though, since they are based in Marshall MI. A quick google search yields no clone recipe for it, but man is it tasty.

jalapeno beer - primary fermentation question

Depends on how peppery you want the final product! I would taste it when you get back after it's been in primary for two weeks. If the pepper flavor is where you want it, don't mess with doing a secondary. But if you are seeking more heat/flavor/aroma, then throw a sanitized handful in to your...

jalapeno beer - primary fermentation question

Why not do a secondary when you get back? Nothing wrong with letting it sit in primary for two weeks. I would suggest using them in the boil per the recipe, and maybe throwing some into secondary when you get back. What's the base beer?

Raising Fermentation Temp - Sleeping Bag & Hot Growlers

Where do you put the hot growler? Do you just sit it next to the fermenter and then wrap both in the sleeping bag?

    Blow out!!

    Blow out!!

Great, now I'm freaking about the saison that I brewed on Sunday. I made a starter and the fermentation took off less than two hours after I pitched. I might stop by HD on the way home from work today to pick up a blowoff tube. Can anyone tell me what diameter tube I need to fit a...

    Tips on Wood Aging.

I plan on doing a clone of KBS and I'm unsure about the timing of all the secondary ingredients. I am going to use coarsely cracked coffee beans and a couple vanilla beans, as well as oak cubes that have soaked in bourbon. Should I add the coffee beans and vanilla first for a week or two, then...

    Saison BBD Saison Furtif

Hey Cat, question regarding FG: I brewed this on 3/03 and my OG was 1.064. I checked the gravity last Saturday (3/24) and it was 1.008. I roused the yeast cake a bit, and then measured again last night (3/28) but it's still 1.008. I was hoping to bottle this Saturday (3/31). What do you suggest?

    Saison BBD Saison Furtif

Brewing up this one on Saturday. According to Hopville, here are the stats. Pretty excited to watch this yeast have sex with itself. The only thing I'm concerned about is ferm temp. I'll have to keep my space heater on for the first few days to keep it warm enough. Beer Style: Saison Recipe...
