Advice on how to brew a "simple" pilsner lager

"Wat in het vat zit verzuurt niet" is a Dutch saying, meaning something like if you plan something it will eventually happen. After a year of delay caused by late delivery of the yeast combined with my limited time window for brewing large volumes at low temperarures I brewed the "simple pilsner...

    Belgian Tripel Karmeliet Clone

Final update: I flushed all the beer with the "Bosteels" yeast from the bottle. The reference beer with Nottingham yeast is drinkable, but too dry. Alas, not all experiments are successful.

    Belgian Tripel Karmeliet Clone

Couple of hours ago (remember ... it's 5 o'clock somewhere) we tasted the Karmeliet clone brewed with bottle yeast after 1.5 days of forced carbonation, and compared it with the real thing bottle conditioned. Attached picture shows clone on the left and commercial Karmeliet on the right. The...

    Belgian Tripel Karmeliet Clone

@anh6513 and Ettels4 Good discussion and thanks a lot for new info. Could you give details on the source of (1) Bosteels using 2 yeasts for Karmeliet, (2) hops being Styrian Goldings and Saaz instead of Hallertau? About 10 years ago, Karmeliet bottle yeast had a very good reputation...

    Belgian Tripel Karmeliet Clone

And just when I thought that I killed this lively thread! I am really brewing like a monk with this beer, in other words: it is still lagering and I did not measure FG again. I would not worry about this for two reasons: Bosteels beers are known to be quite sweet and FG of commercial Karmeliet...

    Dry Yeast, Liquid Yeast Equivalents

I combined info from lots of sources into the table enclosed showing Wyeast# - brewery - WhiteLabs# - dry yeast. Please feel free to comment and update.

    Belgian Tripel Karmeliet Clone

I am currently conducting an experiment that may interest followers of this thread. 2.5 weeks ago I brewed 35 liters of wort using GordonT's recipe for malt/sugar with wheat and oats chosen 50/50 malted/unmalted, Hallertau Mittelfrueh hops aiming for 20 IBUs, spices as suggested by GordonT. Late...

    Michigan brewpub/brewery/winery tour

"Beercycling". That sounds like a dangerous combination of words. Good luck. Need any advice from a local? It sounds like you are involved in PubQuest. Compliments with this great initiative. I see that PubQuest is restricted regionally to US and Canada. Would the Netherlands be the first...

    Kwak Beer

Found it (http://www.mrmalty.com/yeast.htm) and it is great. Thanks a lot. Makes communication between American and European homebrewers a lot easier. We are already struggling enough with units of measure. Did some further work to come up with a table showing Wyeast# - Brewery - WhiteLabs# -...

    Kwak Beer

GuldTuborg, Thanks for pointing this out. I am not familiar with WhiteLabs codes. Therefore used a table (http://www.brewboard.com/index.php?showtopic=44592) that stated WLP530 = Wyeast 1762. Found another one (http://ebrew.com/beer/beer_yeast_wyeast.htm) stating that WLP540 = Wyeast 1762 (=...

    Michigan brewpub/brewery/winery tour

We visited Michigan, Indiana and some eastern states from the Netherlands in April/ May. In Michigan and Indiana, we visited New Holland, Bells, Roundbarn, Uplands and Lennies. Enjoyed Roundbarn the least, and Upland and New Holland the most. The latter probably because we are from Holland, and...

Northeast US trip soon, what beers to look for?

We visited the US from the Netherlands in April/ May. Thanks to the advice in this thread and others we managed to visit 7 brewpubs in total. Advice by bobbrews was particularly useful: Greatly enjoyed the visit to Trinity Brewery in Providence, RI. Great beer, great bison-burger and great...

    Kwak Beer

WLP530 = Wyeast 1762 = strain used by the Rochefort trappist monks? The Bosteels strain probably has a much lower attenuation. Was your pricewinning beer similar to Kwak or dryer? I measured the FG of a commercial Kwak yesterday, and it was around 1020. Hard to believe with 10% sugar in the...

    Kwak Beer

Akavango, I plan to do a Kwak-clone attempt in coming brewing season, but with the original yeast (https://www.homebrewtalk.com/f163/pauwel-kwak-yeast-148427/). I am currently gathering information from the internet. Could you please tell me more about the source of your clone recipe? There also...

    Kwak recipe and taste problem

kwksilver, Two years is a long time for a first reply, but nonetheless, here it is. I live in the Netherlands and am quite familiar with Kwak beer. Your description of the bottled beer is correct. The keg-version is probably a "freak infection", as you suspected. A clone recipe is posted on this...

    Pauwel Kwak Yeast?

You can harvest yeast from Karmeliet tripel. This is bottle conditioned, also from Bosteels brewery, and with a very high probability the same yeast. Dutch homebrewers achieved good results with this yeast.

Advice on how to brew a "simple" pilsner lager

SpeedYellow & tre9er, Again, thanks for you useful comments. @SpeedYellow: I am indeed using little over 1 L starter for a 5-gallon (=23 L?) batch of lager. What would you suggest instead? @tre9er: Comments on my pilsner are not "too hoppy", but "harsh bitterness". I will, however...

Advice on how to brew a "simple" pilsner lager

Yooper and BigEd, Thanks for your excellent comments. These are things I will definitely do following your advice: Use Wyeast #2042 Danish Lager yeast Cut back Cara Pils to 3% No sugar Also some things I already did: Target 25-40 IBUs (35 to be exact) Use only noble hops: Saaz and Hallertau...

Advice on how to brew a "simple" pilsner lager

It is a known fact that pilsner lagers are the most difficult to brew for homebrewers. For the last 4 yours I did an attempt every year to brew a "simple", "supermarket", pilsner type lager. Never to my own satisfaction. The pilsner usually ends last of all my beers I send to a competition. It...
