How many batches have you ruined and how??

Im interested in the many times you have destroyed a brew, and how. So far my experiences are, One infection, and one beer that just wasn't right and idk why. I hope that this thread will attract young and old to share the many disasters brewers face and how to avoid them...

What's your favourite Double IPA recipe?

How would these recipes respond to a little oak? I want to do a DIPA with some oak to sample an IPA how it was in its days on the boats.

Lighter crystal malts sweeter than darker?

That would make sense, With the darker malts you have more sugar caramelized, which brings them closer to carbon, not sugar.

    Crystal Pepsi

This stuff was awesome. Just my 2. But perhaps the caramel color added a little something that produces the distinction form the clear one?

    If I could choose three???

Is it possible to find Amarillo rhizomes? Ive looked a few places on line with no luck. It seems to be an experimental or the result of an experiment and is tightly being controlled by the inventor.

    If I could choose three???

Ok, this seems like a good strategy. Im thinking that focusing on aroma and flavor makes more sense for home grown stuff. I figure if used for bittering, ill lose most of the good home grown qualities in the boil anyhow. BTW, tnx for the recommendation. Ill look in to it.

    If I could choose three???

I have the opportunity to begin growing hops in the spring, but I need to decide on what types to grow. I assume its mostly preference, but im looking for a good combo for use in as many beers as possible. I was thinking cascade, liberty and Willamette. I like the fresh citrusy flavors, but...

EPA, watery brew, first time kegging.

So after about three weeks in the keg things have improved nicely. The beer seems smoother and better balanced. To my surprise the bitterness is suddenly gone, or barely noticeable. Which makes things much better. Its very drinkable now. So i guess some time in the keg is what it needed. I...

    Keg in fridge too soon.

I was supposed to let this cream ale age for a month before drinking. I keeged it and put it in the fridge with out reviewing the recipe one last time. Can I take it out and put it in the basement for a month? Or is it too late? It really needs to dry up a bit, not exactly the refreshing...

Dark Mild Reaper's Mild, 1st place 2011 HBT Competition

Good Idea! ill try it. We used to do something similar to our water bottles in the desert. You put a sock over it and wet the sock then leave hang it in the shade. In a half hour you have a nice cold btl of water without a refrigerator.

Dark Mild Reaper's Mild, 1st place 2011 HBT Competition

The "fail" was about my beer not your help, tnx btw. Anyhow, right now I have a kegerator so buying yet another fridge just isnt in the works at the moment, so I think ill just have to be careful of what types of brews I make in the summer months and what type of yeast I use. In the winter I...

Dark Mild Reaper's Mild, 1st place 2011 HBT Competition

Something I forgot to mention was the fermentation temp situation which im a little nervous about. I couldn't get my temp below 76 (ouch), so I had to pitch so at least the thing would get rolling before the bad guys moved in. I just hope temps between 70-75 wont hurt it too much. Ive heard...

    Tempature question.

Great! Then ill just dirty up the forum by adding yet another "did I ruin my beer?" thread, while distracting completely from this thread which contains an almost Identical topic yet containing a few less a-holes.

    Tempature question.

Sorry for hijacking this thread, but I have a similar question. Last night I brewed a British mild recipie I found on this forum. It specifies a pitching temp and initial fermentation of 65 degrees, as ive noticed most milds do. So my basement really only ranges from 68 at the coolest to 78...

Dark Mild Reaper's Mild, 1st place 2011 HBT Competition

First off Ill say that this was my first all grain brew constructed using the mash tun I built last week. So im pretty excited to try this one in a few weeks. The coolest thing was that I used an app on my thunderbolt that calculated strike temp so that my mash temp would be spot on, and it...
