Finally made my first accidental sour...

So, I started an oatmeal porter a few months ago, planning to prime with maple syrup and have a breakfast porter. :) when I retrieved it from the basement, I noticed the lid of my brew bucket had cracked. Inside? MAJOR FUNKYTOWN. I racked it out from underneath, tried a bit.... Not horrible...

    High sodium / dissolved solids

So, just got my water report back from Ward Labs, and a few numbers jumped out at me: Total dissolved solids: 524 ppm Sodium: 159 ppm Sulfate (SO4-S): 26 ppm Chloride: 150 ppm Total alkalinity (CaCO3): 84 ppm So, with as much as I'll need to dilute this stuff, am I better off just buying...

    So how screwed am I?

Ok, so for the next two weeks I'm in a tiny place since my wife is doing some post-grad work in Chicago. Which means I'm migrating my brewing activity over to my parents' house, where there's loads of space. Here's the problem: their new place has a water softener system on the whole house...

    Holy crap, Oktoberfest win

Just tried out the first bottle of my Oktoberfest. I made it based on the other thread I found with info from the Paulaner brewers, saying their recipe is 70% Munich, 30% pilsner, all hallertau hops. Brewed it back in March (it's called a Maerzen, right?) and lagered in my garage at a pretty...

    Mash tun question

I've been using a 52qt rectangular Igloo cooler as my mash run on my last few batches. Converted it myself with a ball valve, some fittings, and a bazooka type screen from AHS. The problem is the drain hole in the cooler is a good 2 or 3 inches above the bottom of the cooler. I've been getting...

    Mash temp off

I don't think I have my equipment profile dialed in right. Nailed the volume and temp to move from the protein rest to the sacc rest, but the mash temp only moved from 144 to 148, instead of all the way to 152. Guess this ones gonna be a little dry...

A side-effect of insulating your brew kettle...

Aside from improving my BIAB process, putting Reflectix insulation around my brewpot left enough scraps around for my girlfriend to make this: DOG ARMOR! Yes, the crest on the front is a chicken. She actually made the outfit for our puppy, who was too big a chicken to wear it. :D

    Beating a dead horse... kinda

OK, so I searched but didn't quite find my question. http://tinyurl.com/3n4gn7n So with this turkey fryer, the Cajun Injector (or any of seven other brand names...) the heating element and thermostat control are one unit and removable. Since I'm planning to shift over to BIAB anyway, what...

    Another hello from Wichita!

So, my girlfriend (ha, I almost typed "girlfiend") got me a Cooper's starter kit back in March. After trying out the stuff that came with the kit, I've done (all kits) a Belgian Wit, an Irish Red, and an Oktoberfest. The Oktoberfest is still in my basement waiting for, well, October. I have...
