    Wow, that's great. If I'm using, say, 6.6 pounds of LME, an ounce of bittering hops and an ounce of aroma hops, should I lower any of them to take into account the leftover beer?

    Thanks for the advice. My LHBS is closed today so I'll give it some good shakes (it's in a carboy) and leave it open, covered with a towel. I'll also add a little bit more yeast nutrient. Tomorrow I'll pick up another package of yeast and do the rest. Thanks again.

    Better than Apfelwein...

    Interesting. I've always used champagne yeast and had spectacular results. Maybe I'll try the wheat yeast like you recommend next batch.
