    I've done both and I think the one of the primary reasons Palmer splits it up it to bring the mash up to mash-out temperature.

    Does Gelatin affect head retention?

    once i added way too much gelatin to a 5 gallon batch (1 tbsp!) and I truly believe it messed up my head retention bigtime on my belgium tripel. but it was the clearest beer I've ever made.

    yea that seems expensive for the handle. also it says its used, not that it would matter much just FYI. i recommend you visit your LHBS and ask if they have any old keg shells they can part out. may get a better deal.

    Advantages of cooler vs kettle for HLT

    From my experience my kettle (keggle) loses as much as 5 degrees Fahrenheit during a typical one hour mash. I don't insulate in any way here during a Texas summer. No way a cooler loses that much that quickly . by the way, If you stick with a kettle, be sure to preheat it before mashing.

    I think it just tastes better. it's probably in my head then again it's just as easy to add a little corn sugar to a keg, seal it, and let it sit for a few weeks on the side of my keezer. just requires a little more patience. if I need it carbed quickly I still force carb but I try not to.
