    Infected batch?

    Just took off the lid of my Fermenter to take a gravity reading and noticed a very citrusy/funky smell to the beer. This is only my third batch, but I haven't noticed this before. Is it infected? Or can you only tell when you sample it?

    Best way to age beer

    What's the best way to age beer? Ales, not lagers. I have a keg system, so should I keg the beer without carbonation or carbonate it? Should I age it in the fridge or in a cooler(mid 60F range) area?

    Thanks for the input. I figured that since I see so many people using these buckets, and the LHBS supplied it to me, it can't be all that bad. Personally though I like using a carboy. I at least know that there is no possibility of air getting into my brew. I'm keeping my fingers crossed...
