    There are some things that liquid yeast produce and dry doesn't. I know it sucks but what can you do.

    Most cooper kits want you to add a booster pack. Google it and find out the specs for it. Adding more DME will make it stronger. But not more bitter. Check ahs add a pack for coopers. I would do it but:drunk:

    Of the 2 imo the first is more Celtic. It needs some work though again imo. It would make a nice neck wrap on a bottle. If you meant brew by using brau, You are correct brau is brew but that is a German to English translation . I have no idea what a Celtic translation would be.

    Secondary is really the wrong term. It should probably be called a bright tank in most instances. It is mostly used for clearing. You have been following the basic guidelines.     Liquid Malt and the Boil

    Use lme the same way half at the start and the other half at the end. You won't have to boil it at the end just keep it near 180 for 8 to 10 min. The color will change over the next 2 to 3 weeks so don't worry about that.

    I would say 3.5 gal. just make sure you watch it and be ready to stir. You can also use a spray bottle with water to knock the hot break down. And don't worry about the hops.

    I wouldn't put a spigot on your primary as they can leak. I would go with a autosiphon and tubing. You don't have to have a test jar for your hydrometer. You can use the tube it comes in. You have to hold on to it but it also takes a little less beer for a sample.

    Bottle capper issue

    If you need another capper might as well get a bench one. Longest lasting investment I have made was one. 10 years and still caps just fine.
