    stuck mash and decoction

I purchased a bag of lager malt from my local microbrewery, however every time i do a mash it seems to stick. The surface of the grainbed seems to have a relatively large amount of that very grey scummy looking gum on the surface. I was thinking of doing a decoction on my next lager, apart...

    Franziskaner hefe

Does anyone know much about the yeast in this hefe. Has anyone rescued it?? Is it even the same stuff they use to ferment or is it some other yeast they use for bottle conditioning/taste (either way its delicious).

    All grain gravity readings

Was thinking about this the other day. I've noticed that when i take a sample of the boiled wort and cool it down to 20C i get high hydrometer readings. But when i let the same sample sit overnight which allowed the trub to completely fall out of suspension the reading was way down, is it...

Just 5 minutes ago i was fining some beer in preparation for putting into a corny i poured out a generous spoonful of finings and gently mixed them in so as not to aerate. Carbing with beer gas

Hi i was given a keg system which came with a big bottle of beer gas and a regulator for it. The gas is a 50-50 N2 CO2 mix and the regulator is set at about 30-35 psi i think. If i use this will it carbed the beer as well as say 100% CO2 at 15 psi. Or is is that logic way off!! Does anyone else...

pitching on a yeast cake, help

I've a batch on the go at the moment (just waiting for the immersion chiller to work its magic). I was going to put this onto a yeast cake of another (same lager) brew that i've moved to secondary. The first batch that generated the cake was only about 5 gallons but this latest one is more like...

    Fitering the boiled wort

Does anyone go the hassle of recycling some of the first runnings from the boiled and chilled wort i.e. to remove debris and allow the hop strainer/stopper to take affect (as much the same way you do with sparging). Is there much advantage to doing this? does it aid clarity? or is it something...

    mashing temp and time

Hi I know that the time and temp of the mash affects the malt profile etc so different styles require different conditions. Having said i was wondering what peoples work horse temp and time is for say their tried and tested 'on tap' house beers. Im only starting out on AG so im trying to play...

    exposure to atm air

Hi As apposed to the whole carboy and airlock fermentation thing, in the UK it seems to be more the norm to use a bucket either with, but most usually without an airlock. When no airlock is used the airtight lid is snapped on and then opened every so slightly to vent C02. While the beer is...
