    Safale S-04 Dry Ale Yeast

    Just racked to secondary. Active ferment for about 48 hours, then quick drop off. Nice color and taste. A bit raw but I can see and taste that this is going to be a good beer. Half will go into a Pig, the other half in bottles.

    OK, just an observation: Now that I've tapped my Pig, I can see the light that is kegging. One drawback (or advantage) is that is sure is easy to pour a pint!

    I just just bottled the Master Class John Bull pilsner, half in bottles, the other half in a Pig. Has anybody ever made the Master Class before? I got only because it was cheap and quick so I could try out the pig...which I got for a steal and was dying to test out. Thanks!

    As somebody stated above, the honey just takes forever to ferment. Mine has been in secondary over a month, and after I took what was going to be my last hyrdometer reading...I stirred up the yeast a bit and now it's popping every 30 seconds again...

    Good evening all... I have a kit on the way from Northern Brewer that will be a "Steam" beer. My questions is about the fermentation temp. The yeast I will be using is Wyeast #2112 California Lager Yeast, and my basement is at about 57-59F all day. Will this be ideal? Thanks!

    Thanks all! Not trying to clone Blue Moon per se, just trying to get the idea of that style of beer into a bottle. I'm not much into cloning...If I want Blue Moon I'd just buy it (and I do). I just dig what it is and would like to get something along the same lines. All I know for sure...
