    I have the same problem. In my case its the yeast. I wash my yeast and try ro get the most out of it. Pretty much after 3 months in the fridge without using it is about the life of my yeast before things go sour. I have been sticking to SO5 for now and no sour beers this far.[emoji2]

    I sub grits for corn maze all the time but the is for cream of three crops type of beer. Im not sure how that plays into this recipe. Im not seeing that in this recipe.

    If i remember correctly when i brewed this, it wasnt all that great till about month 6 for it to start to shine though. Could be the yeast hasn't settled yet and that is what your picking up in the flavor.

    I lager in my basement. Start primary at 50 degrees. Dielect rest for 3 days. Then secondary for 8 weeks at about 27 degrees or so.     Looks good! I assume you could sub any hops you wanted in this recipe. Such as Crystal or liberty. I make the cream of three crops all the time , only thing i need to do is knock down the corn from 2 lbs to just under 1 lbs.

    Found an article on no sparge brewing in byo and I computed all the formulas and apparently water volume wasn't the problem So I'm down to mash temp lower than indicated or grain crush as far as I can tell. Unless the theory of it being green is the culprit I would maybe try a higher temp next...
