    as far as I can tell the mechanism is a physical process. The negatively charged surfactant binds to the cell walls of the bacteria, which destroys the cell. The phosphoric acid is there to simply keep the pH correct.

    If you're growing a lot of hops at home the best way to test the AA% is to buy a UV/Vis spectrometer. The measurement isn't that difficult.
