    Hey All, I used beeralchemy for years, but after a break from brewing I no longer have a mac that can run it (32 bit software). Any chance one of you is still running it and could export my recipes to beerxml? I have the data file… just need a little help from someone with an old mac.

    Don't Do That.

    Start filling your BK with the valve accidentally open, and then walk away for 20 min. Downstairs neighbors complained about bubbles forming on their ceiling. Don't do that.

    Equipment upgrade question

    A ball lock valve isn't much. Mill + Grains & a weldless ball lock valve. My homebrew shop offered to drill the hole for me if I brought my kettle in, so maybe you wouldn't have to buy the step bit.

    If a ball lock was placed high enough, theoretically you could always just tip the kettle to get more without catching trub. I wish there was an affordable way to have a rotating racking arm.

    Saison aging/mellowing

    My saisons usually hit their stride after 3-4 months. Lots of variables, but that's my personal experience. The ones I brew at the beginning of summer and drink at the end are always better than the ones that get tapped right away.

    Hey, I'm up in Astoria. Swing by Bitters & Esters and talk to those guys. They're super helpful and really friendly. I'm always squeezing brewdays in late and unexpectedly otherwise you'd be welcome. And go for the upgrade, you're dancing around all grain, might as well go for it.
