    I put 4 oz of cocoa nibs, 1/2 stick of cinnamon, 2 anchos (seeds removed) & 3 vanilla pods...I am soaking some cherry wood chips in brandy. I think I'll add that in a couple of weeks.

    I thought when you boil, the water evaporates from the wort and thus creates a higher potential alcohol. No?

    I threw another packet of yeast in but I sure hop it doesnt dry it out. That would suck. A couple of more days Ill check again the gravity.

    I do too!! It is fun to create in my mind new recipes and its super relaxing to do the actual process of brewing. I dont drink too much nowadays because I am in training. I just let my brother in law come over and drink it up. I also went to the FSIBF this past weekend. THAT was the best beer...

    New Hop Variety: Belma- Puterbaugh Farms

    Im sorry but I dont really like the Belma that much. I used a lot of it in the boil and then dryhopped with it. But I had to add some better hops to make it tatse decent. Gawd and I bought 2 lbs of this stuff too.

    I don't know either but I had it last week for the 1st time and I thought it was fab!! The place I got it from ran out so I couldn't bring any up north. So Blind pig tastes similar huh? Good to know, I can get that no problem. :fro:

    The FG was 1.011, making it 6.5% abv So I just sampled this. It definitely has a sweetness to it, (I like it, but maybe I'll reduce the crystal next time) with a melon-y/citrus-y aroma, It needs to get colder. I had my keezer set at 60 for fermenting a steam beer batch. Just cranked it down...

    Ok lower mash temp for ipa. Got it. Actually I do like my ipa a little sweeter. But thats me I guess.
