    Also worth considering: The additional alcohol, if from base malt, could throw off the balance of the beer, and turn out nothing like the original stout. I'd guess that rice/corn wouldn't do that, but you might as well just toss in a pound or six of dextrose and call it a day.

    Get a Vinator at your local LHBS and use a small amount of starsan solution (like a quart) in it on bottling day. Spray a few bottles, then fill, then repeat.

    Oh and use your bucket to multi-sanitize, like bottling wand/racking cane/auto-siphon/whatever. Also, I put some in a spray bottle, which is insanely handy for sanitizing on-the-fly.

    That's a pretty smart idea there, sir! You could brew an Imperial IPA, partigyle for an IPA, then finish with a session pale. At least, that's how it goes in my head.

    Try a FWH addition. That will give a similar flavor as a 20 min addition, and the IBUs of a 60 min addition. The difference is that the bitterness is much, much smoother bitterness, which would probably fit what you're looking for. Then, use the remaining hops for late additions, like 15-0 min...
