    Second brew on the go

    Airlock installed a couple of nights ago, and is now safely tucked away in the closet wrapped in a blanket to ensure the yeasts are nice and dark. Was already a large sediment in the fermenter, hopefully I didn't overdo the "half a packet" estimation. No worries though, I trust my little friends.

    Thanks. Working from a kit is so easy it almost seems like cheating, and 1 gallon batches are far too small...going to have to go shopping I think. Thinking of assembling my first scratch recipe, so during the boil I started wandering the site. Its enormous! Almost overwhelming.

    I started sampling it after the recommended (in the kit I used at least) two weeks in the bottle. But the best bottle was after three weeks so be patient!

    Brewing temperature?

    Opened another after about 3 weeks conditioning in the bottle and it is much improved (as per the recommendations to let browns condition for 3 weeks). Have 3 more kits then can start putting together my own recipes for milds, IPAs, Imperial IPAs, Belgian strongs, and English special bitters...
