    Berliner Weisse

Yes, this is how I brewed my first one and it worked well. Just make sure you go well past your desired final sourness before boiling because of the dilution you mention. I expect it will take you at least a few days to get there, but depends a lot on your set up, temps, pitch rate, etc. Best...

    Berliner Weisse

BWs are traditionally brewed with a short (or no) boil. This helps limit bitterness due to additional AA extraction and minimizes any color impact of a longer boil. DMS is typically not an issue because of the large portion of wheat malt, but if you were worried about it you could sub pale malt...

Switch Options for 2 Heating Elements?

Thanks for this suggestion! This is the route I decided to go. Now I just need to figure out how to wire it as I've only wired standard three way switches previously. Here is a wiring diagram of the unit. I know that when the switch is in the left position the connected terminals are 1:2, 5:6...

Great, thanks for the additional detail Kal! As always, your expertise on this stuff is appreciated!

    Food Safe Heatstick?

Has anybody created such a thing? Most of those out there, including mine, have chrome-plated brass sink drain pipe for the body and PVC at the top. Mounting the elements directly in the kettle is a great option, but some may prefer the portability and simplicity of a heatstick. My...

Switch Options for 2 Heating Elements?

I also dug a bit more on this and realized that those Camco heating elements are a combination of chromium and nickel, like all SS. They just aren't clear on what the combination looks like, but I'll assume it's safe. Thanks for the rec on Grainger! Gonna head over there today.

Switch Options for 2 Heating Elements?

Thanks, these are some great options. I especially like that rotary switch, though will need to do some research on how to wire something like that. Does anyone know whether heating elements are all made which chrome plated SS, or are there versions out there that are 100% stainless?

Switch Options for 2 Heating Elements?

Manual control, preferable with the switch wired directly into the 120V circuit.

Switch Options for 2 Heating Elements?

That's a good suggestion, but I believe I'd need an SSR to accomodate that, correct? Trying to steer clear of relays to keep it simple (my switches are built right into my stand; I don't have a separate control panel).

Switch Options for 2 Heating Elements?

I am planning to dump my heatstick due to lack of food safety (mine has chrome and PVC) and plan to install elements directly in my BK and HLT instead. I do not have enough power to run both at the same time, so I'd like to find a switch that allows me to have either "left side on," "right...

    Love this one! I'm in.

    Berliner Weisse

When mixing the LME, you'll of course want to mix it with hot or boiling water as you normally would, then cool it to ~100 degrees for lacto pitching. The rest sounds pretty good. I would not allow the sunlight to hit the wort directly, however I think it would be fine to put it on the deck if...

    Berliner Weisse

The boil occurs after the pitch, which allows you to kill the lacto once it's achieved your goal and so it will not affect your downstream equipment. If I recall correctly, I let the lacto go for about 2-3 days and it wasn't quite sour enough for me, but there are a lot of variables (pitch...

Show Me Your Wood Brew Sculpture/Rig

A little late to reply (you've certainly tackled this already) but my stand is about 6' across and I have casters supporting only the corners with 0 sagging. If I put all of my brewing equipment, a wet mash and a rhinoceros on the middle, it still would not sag.

    HLT as RIMS?

Sounds easy-peasy! My assumption about energy usage is that you are heating liquid in your HLT for the entirety of your mash, even if just to maintain its temp. With a RIMS you spend some time heating the wort if trying to raise the mash temp, but otherwise the HLT burners are off until it's...

    HLT as RIMS?

So I finally brewed and gave this a shot. It worked much better than I envisioned! Essentially, this creates a tubeless RIMS with no additional equipment. This is perfect for people who want to maintain (or raise) mash temps without direct firing their mash tun or adding a HERMS coil or RIMS...

    Doppelbock (and lager) conditioning

Sorry for the delayed response! You've certainly dealt with this by now. But, worth sharing my experience in case others have questions. I have brewed this beer twice now and let in lager for 8-9 months each time. I added yeast the first go round and the carbonation came out fine. I did *not*...
