    3278; too much funk

Hi All, I brewed a pLambic about a year ago using 3278. I let it sit in the fermenter, untouched, all year long. I recently tasted it and found it to have a nice sourness up front, but the vomit/funk to be too strong at the end. Anyone else have this experience? Will letting it sit longer...

Considering buying one. Has anyone used one to great success? To great failure? Anywhere in between? Has anyone used one without a pump? Thanks!

Online is cheaper than the LHBS except...

For bulk grains. Then the LHBS beats the pants off the online stores (when I take shipping into account.) Anyone else find this?

    3638, Aventinus, underpitching

Hello All, Im looking to brew an Aventinus clone this weekend. I like the estery taste in Aventinus. I calc my OG to be around 1.074. Mr Malty recommends a 3.43 liter starter for this gravity, however, Wyeast warns against over pitching and recommends "decreasing the pitch rate" to increase...

First AG, BIAB, no airlock activity yet, did I miss something?

Hi all, I tried my hand at my first AG batch yesterday. Pitched around 7pm. Is now 1:40pm. No activity yet. I know this isnt a sign of doom but usually I have airlock by now, and am wondering if you all would double check my process to see if I missed a step: 1. Heat 3.75 gallons of water...

    Poor man's Hop Back simulator

Hi All, Ive had an idea on how to simulate hopbacking without all the equipment. Tell me what you think: Around the time your wort starts to boil, fill a medium sized pyrex bowl with water. Microwave to boil. Throw in hops. Cover (fyi, this is airtight.) Swirl gently while your wort...

    IPA, Flameout addition, Aeration

Hi All, Looking for expert opinions: I am making an IPA along these lines. Im planning to throw an oz or two in at flameout and give a quick swirl before slamming the lid on and immersing the pot in icewater (I have a big sink.) Usually, for aeration, I wait until the wort is < 70 deg F and...

Stuck RIS; Rack onto Montrachet cake?

Hi all. I started an ris up around 1.10. I pitched two packets of s-04 and started with some very vigorous fermentation. Unfortunately, It is now stuck at 1.04 after a month in the primary. Ive read on these forums that a good way to get fermentation going again is to rack onto a yeast...

    Phantom Hops Smell

Hi All, Yesterday I brewed my third batch ever. All three times I have noticed that the next day, randomly throughout the day, I get a whiff of hops from seemingly nowhere. Has anyone else experienced this? Is it in my: Nose Skin Mind ? Do I need a Shower Shrink Beer ? :drunk:

    Belgian and temp

Hello all, I am new to brewing, having just bottled my first batch and brewed my second. For my third, I plan to brew a Belgian Quad using Wyeast 1762. I understand it is best to keep this strain at 75 degrees so that they produce the proper esters for this kind of beer. My plan was to keep...
