    I believe i under pitched. I made a yeast starter, it was my first. It went well but I made a mistake at picthing. I just poured in the top liquid. I didn't shake it before hand so the cake never made it into the wort.

    I haven't done anything yet. I hadn't taken a reading until today before bottling. because I've never had this issue before.

    I brewed a Midnight Beatdown Wheaton Porter from Northern Brewer. OG 1.060, I'm at 1.032 after 5 weeks. I just want to bottle it but I'm afraid if I use my usual 5 oz of dextrose priming sugar I may end up with exploding bottles. Any suggestions?

    I have had the same issue with hose clamps recently. Last batch I made sure to tighten them beforehand and everything was fine. But it seems much better to make sure the thing is bombproof so it is one less thing to worry about.

    I think it will be fine it just takes more time. Give it three weeks. That seems to work for me. One week is not enough at your temps. Don't add anything or mess with it. Just be patient. It will be worth it.

    Hey, I just brewed a True Brew Ale kit and it's definitely on the right track. You will need to add some roasted barley to it to make it an Irish Red though.
