    Premium Bitter

I'd leave out the aromatic. Less is often more in these types of beers. About 7% crystal is about right.

    King's Cross ESB ver. 1

I think it looks good, I think you'll like the Bedford yeast. I would probably have cut back on the high L crystal and try and keep crystal to around 5-7% of total. So something like half the 120 and use UK crystal if you can source it. But I'm sure you'll like it. For me I'm more into...

How much elderflower in ordinary bitter recipe

I recently did a simple summer wheat ale with elderflower. I'm afraid it didn't turn out as well as I had hoped. I used the elderflower syrup that IKEA sells for making up cordial. That smells pretty nice but i then decided i better sterilise it and so did 10 minutes in a pressure cooker and...

    Source for organic Maris Otter?

Looks like they do, though sourcing it in the US may be problematic "Warminster Maltings is one of only three UK maltsters with Organic certification. Crops of Spring barley and Maris Otter are contracted annually with established Organic growers with a track record of delivery."...

    Source for organic Maris Otter?

I think the main thing was the much reduced yields compared to more modern varieties but maybe the disease resistance as well I don't know. Its not that old mid 1960's I think it was developed. Here's the website of the owner of Maris Otter http://www.robin-appel.com/product/maris-otter-50/...

    Source for organic Maris Otter?

My understanding is that Maris Otter is owned by I think Robin Appel, a seed merchant. So its grown under contract from his organisation, I've read that it comes with quite specific growing conditions, one of which is low use of nitrogen fertiliser, as they want to keep it low in protein. So...

    LHBS discount to AHA members

Morebeer does 5% off for AHA but 10% for local brew club at least in store.

    Brewers licorice

I've used the stick of brewers licorice, used half a stick in 5 gallons added about 5 minutes before flameout. I did take a small amount of boiling wort to make sure it was dissolved before adding. For me half a stick seems about the right amount, its quite subtle, I doubt, if you didn't know it...

Stilton Blue Cheese: Success, it smells like foot rot!

Looks great. How does it taste compared to the commercial. I can buy some here from trader Joes but it always has that slight almost acidic gone off taste. The standard English stuff is very creamy and doesn't taste like the one I buy here even though its imported, don't think it does well...

    Yeast Culturing Kit Recommendations?

I really don't beyond using beersmith to tell me what size starter size I should be using. I just pitch my slant tube with added wort into the starter and place on a stir plate for usually 2-3 days until the yeast shows signs of reaching full utilizations, sedimenting. Then I usually depending...

    Yeast Culturing Kit Recommendations?

Yeah i can definitely see the advantages, just having only 1-2 slants stored is quite a good one right there. For me its just another step that would mean more planning but I think you're way is probably better. I'd also worry a little about having the larger exposed surface area of a plate...

    Yeast Culturing Kit Recommendations?

The kit does look good but I really wouldn't use it myself. I think you'd be better off building up your own. Morebeer has pretty much all the stuff you'll need. http://www.morebeer.com/category/beer-yeast-culturing-supplies.html. The kit seems to use Petri dishes a lot which I don't use, so...

English Ales - What's your favorite recipe?

Thanks for posting your recipe, I've been meaning on having a go at this, I like the almost flowery to me at least aroma. So do you think the yeast from the bottle is the actual fermenting yeast, I'd heard discussion that it might be a bottling strain. Sounds like you've done a few iterations of...

Monster Mill owners with base - quick question

Works fine on top of standard home depot 5 gallon bucket so would think it would be the same on a 6.5 gallon one as well

    Mild recipe

Great, glad it worked out well. Try using Maris Otter as the base malt next time instead of the GW pale, I think you'll notice the difference.

How do commercial yeast companies propagate their yeast without changing yeas...

Guessing they will aliquot lots of standard stock solutions of their yeast stocks at low generation time and freeze in liquid nitrogen or -80C. Then keep track of the number of passages or generations they use to get the yeast for production and routinely return to their original aliquot from...

English Ales - What's your favorite recipe?

Interestingly Firestone Walker does a 60 min mash at 145F, followed by 10 mins at 155F for their american pale 31 beer. Most of their stuff is heavily UK influenced. Have done that quite a few times and it really works well for that recipe (as below link)...

English Ales - What's your favorite recipe?

For what its worth I think red wheat is primarily grown in the US and traditionally they grow white wheat in the UK and so I presume that's what they would have originally used. At least that's true for the wheat that goes into flour production. I think red wheat is better for bread, higher...

Morebeer.com sells 2 row for $37, Maris Otter for $63, regular UK pale malt for $60. Luckily I have one of there retail stores within a few miles.
