    Once the holidays are over I may take you up on that! In the mean time I have a keg to convert and a new propane burner from the SWMBO to play with. Now I just need to find something permanent to mash in and all-grain here I come!

    So a batch aged six months in a carboy will taste a lot different than a batch 1 month in a carboy and 5 in the keg on CO2?

    I'm not sure about beer, but I did find this section describing home-made wine. I have to imagine that would be sufficient case law to expand "personal use" to this definition. The general consensus seems to be that "personal use" and non-commercial use are almost synonymous.

    So I kegged my first batch last night after 4 weeks in the carboy. Will it continue to age in the fridge under co2 pressure while I am drinking it? Or do I really need to stash it in the closet?

    It all depends on what your heat source. I don't think my stovetop could boil 6 gallons in less than a day.

    I would save one of them so you can taste what you used to make with Mr. Beer compared to what you make now with your increased skills.

    It's not that you are using a finite resource, it is that you are using a portion of the maximum water treatment capacity. Generally, unless you live in a drought region (I.e. The southwest) it is really not that big of a deal.
