    Maris Otter in Saison?

So I have a recipe for a Saison I'm planning to brew. My recipe calls for 9lb Pils, 2 lb Wheat, and 8 oz dextrose. I'm holding on to a bunch of maris otter right now, and I'm wondering if that would an ok substitute for the Pils. What kind of change in flavor could I expect from that substitute?

    No boil Berliner and DMS?

I'm looking to take another crack at a berliner weisse. This time I'm going with the no boil method. I want to use Pils as the base malt because that's traditional. DMS formation is still something I'm a little unclear about. I know pils malt has a lot of DMS precursors, so when you boil you...

All-Grain: Saison de Erin (looking for input)

I want to brew another beer for the wife. She loved the first beer I did for her, which was basically a gumballhead clone. This time I'm wanting to take a stab at her favorite style. Saison. The recipe is pretty basic, but i'm looking for some input. As a note, once it's out of primary I was...

    All-Grain: Oblivion Russian Imperial Stout

This is my first attempt at this style. I've been working on this recipe for a bit, and me and a buddy are planning on brewing it soon. I usually keg, but I plan to bottle condition this batch so that I can age it easier and possibly give some away as gifts if it turns out well. Oblivion Recipe...

    3L Erlenmeyer Flask size

I'm going to be building a stir plate soon, and I want to get a 3L Erlenmeyer as well so I can make 2+L starters with plenty of headroom. I can't find physical dimensions on these anywhere. Anyone already have one and can tell me about what the diameter of the bottom is and about how tall it is?

    Starter for a Dopplebock

I have a dopplebock recipe I was planning on brewing late fall to give it plenty of time to lager for a traditional Lent release. I've never prepared a starter before as it hasn't really been necessary in the ales I've brewed. The only lager I've brewed used a starter, but it was a collaboration...

Munich Dunkel Dreddit Dark (Quick Dunkel)

After drinking more of this I decided this really fits more as a Quick Schwarzbier than a Dunkel. A bit to roasty for a Dunkel. Grain Bill: 9 # German Munich 1 # German Pils .5 # German Carafa III .25 # Melanoidin Hops: 1.75 oz Hallertauer Mittlefruh 4.7% AA @60 Min Water Treatment: Start with...

    Dreddit Dark

So, my buddy is an avid player of the Sci-Fi MMORPG EVE Online. He's also an avid Reddit reader. There is a corporation (group of players in game) run by a bunch of reddit folks called Dreddit. As part of the application process for joining the group he has to do an 'Arts and Crafts' submission...

    Driving keg with carb stone

So I carbed my most recent beer with a carbstone. I've done this before, but I've always removed the carbstone after carbbing. This time I decided to just leave it in there. Is there any reason not to do this? The difference I'm noticing as that the pressure coming out of the faucet doesn't seem...

Low Profile Tavern Head and Quick Disconnect

I keg all my homebrew in standard corny kegs. However sometimes the occasion arises that I want some commercial beer in kegs. Until recently I always just took my corny up to one of our local breweries and they'd fill that for me. I wanted more flexibility so I got a low profile tavern head. The...

Is DMS an issue if you were to Pasteurize a beer

This is more of a curiosity question than something I actually plan to try. I know a lot of commercial brewers pasteurize their beer. I was always under the impression that pasteurization was done by applying heat to the liquid. In beer wouldn't this cause DMS to form again? Obviously it...

1984 Indianapolis 500 Beer by Falstaff

So, i work at a brewery and we occasionally sample brews from other breweries. One of our delivery drivers had 5 cans of this that he found in a house he was cleaning out a few years back. We all decided to open one and pour samples to see if it was at all drinkable. The seals were all...

    Green Flash - Palate Wrecker

I just had this beer for the first time tonight. Holy crap! It's easily one of the best double IPA's I've ever had. The hops were incredible, and the malt was the perfect amount to stand up to the bitterness. Seriously, I wish I didn't have to drive out of state to get it. It was well worth the...

    PK-Berliner

This is based loosely on Morkin's All Grain Imperial Berliner Weisse. I decided I wanted something more traditional though. So I subbed Pils for the US 2 Row, which meant a longer boil for DMS. I also lowered the gravity dramatically for the more traditional low-alcohol Grain Bill: 3 #...

Plastic Keg to MLT conversion - need suggestions

So I managed to get a plastic keg because it has a huge crack in the bottom. I'd like to convert it to an MLT. The crack isn't an issue because it's the part of the bottom I'd just cut out for an opening. The problem I have is that the opening at the top isn't the same size as a standard keg...
