Thoughts on temp control during fermentation

So I was thinking how to better manage temps during fermentation and I have read about swamp coolers here, but surrounding my bucket with wet towels and a fan worries me that mold and musty stuff can develop. As I was cooling my Wort an Idea came to mind. If I get a Wort chiller drill two holes...

    How do I control ABV%?

These were all extract kits maybe my temps because I dont have a fridge to put the primary in so 68 degrees is the coolest place in my basment. Next time I will clear out my fridge and put it in there. So can I go directly to the fridge after pitching my yeast or should I give it a day to start...

    How do I control ABV%?

How do I control my alcohol percentage? All my home brew (3 so far) IPA, Blonde, Red seem to have a heavy alcohol taste. Don't get me wrong they all taste great!!! But they all seem to have a heavier alcohol bite to them. I am a light beer drinker so it may be I'm not used to home brew yet. :mug:

full boil without a wort chiller

I bought 20lbs of ice from the supermarket and filled the sink with it. Put the pot in fully immersed in ICE and stirred the wort keeping it moving and adding ice as it melts quickly. Took all of 25-30 minutes and I was down in 75 degees so I could rak to primary. I've done this 3 times and...

    Bottle now or wait?

I'm no expert but I listened to Revvy and my brew came out crytal clear after leaving it in the primary for 4 weeks, then bottle conditioning. The force is strong with him.... My other beers suffered cloudyness until I joined up here and read these posts.

Staying above the Trub line when racking to secondary

I'm new at this and did my first brew last week. When racking over to the secondary how can I be sure to stay above the trub when siphoning it off? When I did this Sunday I notice in 2 areas I clearly hit bottom when transfering it over to the secondary. The beer was an American Pale Ale and was...
