Autumn Seasonal Beer Samhain Pumpkin Ale

Brewed this last Sunday. Fermentation began about 20 hours post pitch. Bubbling has slowed way down at this point. Wort/beer is nice pumpkin color but very cloudy. I am going to leave in primary until next Saturday then rack to secondary. Do you recommend I use gelatin when I rack to clear...

    Home made fermentation chamber

Just made a home made fermentation chamber. I live in Houston area where temps have been 100+ degrees outside for over a month and a half. Fermenting has been a challenge. Maintaing right temps has been tough. Built this out of a old half height server cabinet. Lined the inside with styrofoam...

    What are you drinking now?

IMHO I think Sam Adams has more balance and flavor with Octoberfest. But keep in mind, octoberfest should be a lager, not an ale.

    So who's brewing this weekend?

Going to brew a pils and a stout tomorrow if weather is not too hot. Forecast to be 107 in Houston. I don't have a wort chiller. I use an ice bath to cool down my wort. Could be worse, could be in the carolina's.

    What are you drinking now?

Having a Saint Arnold Octoberfest. Not too bad for an Ale version. Sam Adams is better. More flavor and balance. My ale version is better yet of course. :)

Adding coffee to a stout or porter

What I do is take 3 Starbucks VIA packs add to my boiling priming sugar and water mixture. I let it boil for 2 -3 min then add to the bottling bucket. I then add the fermented porter and very gently stir. Adds just the right amount of coffee character to my porter. Many ppl have commented to me...

    Stable gravity but still bubbling?

Why would you clarify ( secondary ) a hefe?

    Dunkleweizen in the bucket

Don't depend on airlock. From all research I have done on Dunkel, give it 21 days primary, then check for 3 stable days of hydro readings, then bottle. Even though my krausen is beginning to fall, I know fermentation is still going. Have a brew, relax, and you will be rewarded with the...

    Dunkleweizen in the bucket

Leave it. I have a Dunkel, brewed 10 days ago, krausen just now starting to fall. Gonna leave mine another 2-3 weeks, then straight to bottle. No need to rack to a clarifying carboy ( secondary ) as this beer is not supposed to be clear. This is my first AG, and I am overly pleased with it's...

    4th Batch Made, 1st AG

Day 3 in primary, still has Krausen and actively fermenting. Fermentation temp right at 64 degrees and holding. Per a Jamil Show episode, he recommended fermenting Dunkel at 62 ish to keep the banana and clove balanced, to replicate a true imported one. I assume that by fermenting at a lower...

Easy Stovetop All-Grain Brewing (with pics)

Ok, I'm in! With the holidays coming, I am looking for some ideas for my first AG or PM. I am looking for a smooth, well balanced, and festive brew. Again, this will be my first AG / PM so simplicity would be nice, but I am not afraid of a challenge. I will be doing the stovetop method...

    Secondary/Bottling Question

Why not just talk them in to holding the competition to a later date? Reading what Revvy has stated, as well as the other vast information within this site, you can't rush perfection. I would go back to the contest organizers as a group, and convince him/her/them that the time window is too...
