Burned out on IPA/IIPAs -- am I alone?

I've been on a IPA/IIPA bender of late. For the last 6 months or so, all I've been drinking are IPAs. Each trip to the bottle store results in a six-pack or two of a new IPA.....so I've gone through plenty of craftbrews in that time. Problem is, I'm now finding I'm "burned out" on these hoppy...

Fermentation is rolling -- but not kreusen?

Is it possible to have a rolling fermentation without a protracted kreusen? I brewed an imperial stout on saturday. By sunday, I had a nice fat kreusen which blocked my airlock. I then removed the airlock and replaced it with a blowoff tube and at the same time pitched in some new yeast...

    Suggestions to recover underpitched brew

So I brewed up an imperial stout this past weekend, and totally overshot on my OG. Since I was brewing a big beer with BIAB method, I expected (based on some things I had read) to get much lower efficiency than I normally do (65% vs 70%). So I banked on 65% and also added in a little more base...

    First contamination -- sourcE?

Got my first contamination this last brew...nice white pillows sitting on top of my wort long after the kreusen has fallen. Waiting to see how bad it gets to see whether I can salvage the brew or not. Two possible reasons for the contam: Decided to just pour all the wort into my carboy...

    Can I replace Wyeast 1056 with 1272?

I'm looking for an alternative to Wyeast 1056/US-05, something that is relatively clean, but more importantly, something that has a higher flocculent rate. I brew mainly APAs, IPAs and stouts. Was looking at Wyeast 1272 as a replacement, since it has high flocculation. Would this be a...

Suggestions wanted to help improve efficiency on my BIAB method!

Wondering if any folks experienced with BIAB could critique my method and see if there are ways I can up my efficiency. Here's my method...it's not a strict "pure" BIAB method, but slightly modified. Note: I do 3 gallon batches, hence the small grain bill. Steps 1. mash 8lbs grain in an...

Centennial hops - flavor/aroma profile off?

I read in most places that Centennial hops are citrusy or floral-like. However, whenever I smell it or taste it (busy drinking a Founders Centennial IPA now) I taste and smell more earthy tones. I definitely dont get any citrus at all. Am I alone in this or do other find Centennial to be more...

Sealing foil hop bags - clothes iron?

My local HBS sells pellet hops for $2/oz and know I can do MUCH better online, especially since I can buy 1lb hops for $8. I dont have a vacuum sealer at home though, so keeping the bag sealed and the hops fresh could be a problem. HOWEVER, I have read that folks can seal the foil bag with a...

Critique method of dry-hopping in keg.

First time I'm dry-hopping in a keg, so just want to make sure I'm doing this right: From what I've read, the way to go is as follows: 1. Ferment X weeks 2. Rack to keg 3. Dry-hop in keg for 7-10 days at room temperature (~71F) 4. Remove hops (I usually use a strainer bag) 5. Crash...

    Can over-priming lead to sweetness?

So I cracked the first bottle of an American Pale Ale that I made (Kona clone), and I knew it was going to be overcarbed based on a miscalculation of priming sugar added. Maybe a difference from the desired 2.0 to 2.4 volumes CO2, so not too bad. However, there is some residual sweetness in...

Estimate primary time based on OG/ABV

This ISN'T a is by beer ready to secondary thread. I've pulled a lot of recipes from the HBT database, and it's interesting to read about the length of time people primary for before bottling/kegging. Some brews are ready to go in 10 days (e.g. EdWorts Haus Pale Ale, BMs Centennial...

    Octoberfests - disappointed

Been seeing a lot of recipes on HBT lately regarding Octoberfests, and based on the recipes and descriptions, they've looked really tasty! So yesterday i was in the local bar, and they had two Octoberfests on hand, one was a Left Hand Octoberfest and the other was a Stoudts Octoberfest. I...

Crash cooling -- will it cause spices to drop out?

I'm busy brewing a spiced Christmas ale. It's almost done fermenting, and want to crash cool it before bottling to try clear it up a bit. My concern is that crash cooling may pull out the spices as well as the yeast. Does anyone have any experience with this....or am I worrying too much?

    Adding creaminess to a stout

I'm busy formulating an american stout recipe that I want to make with lots of body (really chewy), creaminess and a good thick head. I'm undecided on whether I should go with flaked oats or flaked barley, or perhaps both. I understand that they do pretty much the same thing, so would going with...

    Mounting gas manifold in keezer?

Is there anyway to mount a gas manifold onto the freezer (inside) if there is no collar on the freezer? Right now I have a 3-way manifold that is hanging loose, and all the cables and kegs are getting very cluttered. Would like to get the manifold off the floor of the keezer, which will also...

CPU fan to 12V DC charger connections

If I want to add a CPU fan to my keezer, I understand that I can continuously power the fan using a normal 12V DC power supply from any old cell-phone. Please correct me if I am wrong: but for the wiring, I would wire red-to-red and black-to-black from the CPU fan to the charger, and just...

Terrapin -- props for helping out homebrewers!

I must say I am super impressed with Terrapin breweries. They make two of my favourite beers (Rye Ae and Coffee Oatmeal Stout), which I have clones of that I want to make. Before making the clones, I wanted to know about the kind of water they used and whether or not they made any chemical...

Cant stablize keezer temps -- driving me CRAZY!!

No matter what I do, I just cant get my temps to stabilize in my keezer. I have a Johnson A419 controller in a chest freezer. Current settings are> Setpoint: 45F Differential: 3F AsD: 12mins The probe is taped to the outside of a keg, and has a layer of bubblewrap taped over it. I...

Correct positioning of poppet in keg post?

I just recently got 3 kegs from KegConnection .... this is my first experience with kegs and trying to figure some things out. One of the questions I have relates to how the poppets in the posts are supposed to sit. On all 6 posts, I've noticed that the poppets are wedged quite nicely up into...
