    Opinion on secondary headspace

So I have a minor dilemma. I've got a baltic porter that has been in primary for three weeks, it is done fermenting (8.5% ABV, woo-hoo) and I want to transfer it over onto some oak cubes I picked up from AHS. Problem is I only want to do about 3/4 of the batch on the oak and then leave the rest...

    Vienna vs. Marris Otter

I'm wondering if these two bases can produce a fairly similar beer. Here is why I ask: I brewed a pumpkin ale (minus the pumpkin) back in september with a Vienna base (partial mash, so extract made up the rest of the base) and it produced a decent beer. I was happy with it. Fast forward to...

APA and WLP002 English Ale Yeast

Any thoughts on this. I want to take advantage of the AHS $20 kits but don't really want to buy new yeast. I have the English Ale yeast washed and ready to make a starter but not sure how it will affect an APA or if it would just be weird. Still fairly new to all the different yeast strains.

So there goes my first attempt at a recipe...

So my first attempt at creating my own recipe went horribly awry. I had planned on doing a mild that looked like this: 3lbs Pale LME 1LB Marris Otter 12oz Crystal 60-L 4oz Pale Chocolate Malt 4oz Cara-Pils 4oz Coffee Malt 4oz Biscuit Malt Mini Mash this and put in .75oz Kent Goldings...

Working on my first recipe (a mild)

So a new brewery in town, Jester King, has a Oak barrell aged Mild that the SWMBO loves and I am somewhat fond of. So I figured I would work out my own recipe and see what happens. Here is what I have so far (Partial Mash): 3lbs DME 1LB Marris Otter .75LB Crystal Malt 60L 8oz Belgian...

Any tips/ideas on why my beer is so hazy

So on for my sixth batch I did the Piloncillo Brown Ale kit from AHS. It was partial mash and I brewed it up on 11-20-10. It took a while to really get rolling on fermentation (nearly 50 hours after pitching) but after that all was good. I took a final hydro on 12-18 and had 5.1% alcohol. It had...
