    Brewpastor in BYO!

I open the December issue of BYO that came in the mail today and who should I see in the homebrewer profile section? The Brewpastor himself, with a huge color spread of some very familiar homebrew equipment. So Rev, when can we expect the celebratory round? ;) Congratulations! :mug:

    All-grain yeast starters

I was browsing the BYO website and found a blog entry from the editor mentioning all-grain starters. Anybody ever do this? I haven't gotten to the all-grain stage yet (fiscal reality again $*@* it) but I do partials and this intrigued me, particularly as it'd be a heckuve a lot cheaper than DME.

    Adventures In Underpitching

    I think I just majorly underpitched a Belgian ale. Here's the recipe: 8lb XLt LME (UC Pale) 2lb sugar 2lb Pilsner malt (partial mashed @150F for 45 min) 2oz Styrian Goldings @ 5%AA bittering 1oz Saaz @ 4%AA 15min .75oz Saaz @ 4%AA 5min I had planned ahead with a 3qt starter of...

Always listen to your Papa Zian

Sunday was Brewday this past weekend, and it looked to be a day like any other. The wort was cooled, the equipment and carboy was sanitized and I had a two day old starter (my first!:D ) ready to pitch. I was not worried. This was also my first time playing with Star-San and I was amazed by the...

    Is it possible to overpitch?

The brew I'm planning for this upcoming week is a mild. (Sumtin fer da missus) I'll be making a starter for the first time and was curious if it was possible to pitch too many yeast into a batch. So far as I know the only downside to overpitching is wasting the extra starter wort on yeast you...

Wife's giving me equipment for Christmas

So my wife is gently but firmly asking me what she should get for my Christmas gift. I'm thinking brewing equipment but I'm not sure what I should get. The price limit is $100, though that could be bent slightly. :D I have the basics: carboys, buckets, an auto siphon, bottles, bottle blaster...

    Clear Stout?

I bottled a brown stout two weeks ago and peeked at the bottles today to see how they looked. They are crystal clear, looking more like a red ale than a stout. Is this normal or did something go awry? The beer won't be ready until December so I'm obviously early, but still curious.

    A Star San "no-rinse" question

So I have a bottle of Star San and the directions tell me to let it air dry. How long do I actually have to wait before it's safe to add the wort and pitch the yeast? With the local humidity around here, it could be 3 days before the carboy dries.

    How do I harvest yeast?

I've heard two schools of thought on this and was curious as to what you folks out there do. The first involves skimming the yeast off the krausen and culturing. The main flaw I see in this method is that I'd be picking up a lot of "stuff" with an unknown amount of yeast. The second involves...

When to toss moss in the sauce?

Most recipes I've seen say to add Irish Moss at the last 15 min of the boil. One exception is a recipe I just love that says to add the stuff at the beginning of the boil. I never have major chill haze problems w/ this method but was wondering: Am I losing anything by boiling the IM for 60...
