    I'm also in PA. In my area we have orchards and we have one outfit that presses juice. The juice that is pressed is (by my educated guess/taste) made from all the crap apples just like Zeiglers. If you want a custom/special blend, you need to buy a lot, which is why the LHBS's do big batches...

    Try this yeast if you haven't already. I just went back to it after trying for the first time and I'm very impressed. It is fast and furious - will go from 1.07 to 1.01 in 3-4 days. Yeast doesn't drop-out until about 1.002 but a few weeks of aging brings that smooth apple taste back...

    Refer to the nutritional facts of the sweetener you're using. Example: Honey Serving Size: 21g / 1 Tbsp Sugar: 17g So this is 81% sugar (17/21). Need 1.23 lbs of honey to make 1 lb of sugar.

    Baumans in Sassamansville, PA does all the pressing for the local orchards. They also sell juice but its often made from red delicious and other junky varieties so I don't brew with it. Their juice is flash-pasteurized (heat). Frecon Farms up here grows apples and makes their own hard cider...

    It will work, but it will be extremely time consuming and the yield will be poor compared to pressing. I have a Champion juicer with 1/3 HP motor and trying to get a significant amount of juice is very slow.
