    Rennet and temperature

Please help me understand a thing. When a recipe says "Bring milk to 30C, add rennet and let sit", do I have to maintain the 30C temperature as the milk curdles or is it fine to let the pot cool down slowly? Thanks.

    All Brett C (WLP645) - Belgian taste

In a 100% Brett beer Brett C is supposed to give pineapple flavors. Does it also give a light phenolic character to the beer? I'm looking for a light Belgian taste.

    Chimay yeast?

It's my first attempt harvesting yeast... I confiscated an almost empty bottle of Chimay - the blue bottle - in the middle of a diner. And while my wife was apologizing to our friends, I took the bottle away to the basement. Later I fed the slurry with some light wort and transfered it to a...

    Scarab in the wort

Something terrible happened this evening. A bug - a sort of scarab - took a long dive into my cooled wort as I was adding water to reach the 5gal mark. I had to filter the wort into another carboy to get the bugger out. I could not resolve myself to dump the wort because of this and so...
