    Fantastically reply, airving. I've only recently ventured into wine but have been doing all grain for a few years now, hence my curiosity about the temp. I will give it a shot fermenting in the low 60s and do the 02 addition and nutrient for additional insurance. Thanks for the help!

    I am making WE Chilean chardonnay kit. The yeast supplied is red star premier cuvee. The instructions call for ferment temp 72-75, but red star's site indicates a far greater temp range for this yeast, and it appears that chards can be fermented much lower.     Thanks. The kit instructions are silent on the issue. I know all the dissolved o2 is driven off during a boil, hence the need for o2 injection when beer making, but I guess I will skip it and see how it goes.

    I've been brewing all grain for a few years now and am going to try a kit wine for my wife. I have a Williams oxygen setup but I don't see anywhere if I should inject o2 into the wine prior to pitching.

    This recipe has turned out to be a fantastic one. My wife's mom even loves it and she is NOT a beer drinker. I did get some real bubblegum esters, which is weird, but not off putting at all. Color was spot on as well. The store bought is on the left and had a bit better clarity.

    Weissbier Bee Cave Brewery Bavarian Hefeweizen

    Just brewed this today. I was a bit low on the sg, 1.052 but I'm thinking its acceptable. Also am using a vial of wlp380 as my lbhs was out of 3068. I'm going to ferment low (63) and am hoping for the best.

    After just under two weeks, my fg is down to 1.008 from 1.066. This pacman yeast is one hungry bugger! The sample tastes okay but really alcoholic. I'm hoping this mellows out as I was looking for a nice malty beer.
