    Oktoberfests

    I remember REALLY loving the Sam Adams version last year, but I'm not feeling the 12 pack I just picked up. Strange....it just seems to have an odd after taste. Samples of the O-fest I've been lagering for a few months are mighty tastey. Can't wait to tap it fully for a party next weekend.

    First lager- Yuengling clone

    For what it is worth, AHB is my local store. They tend to keep 2 or 3 recipes on tap there to sample and I have tasted the Pennsylvania Lager. It's really good, and very close to Yuengling.

    Without Airlock

    Second the foil suggestion. I use foil for all of my lagers only because I don't have enough clearance for an airlock in my freezer. Haven't had a problem yet.

    I dump my hot wort all the time and my unrefined palate picks up no ramifications and my untrained eyes pick up no clarity issues. OP, I think you'll be fine. I base this on nothing but personal experience, though I have had some peer reviews of my beer and they seem to like it. :)
