    So I realize that malic acid is used to adjust the pH, but what flavor difference would it make to my cider? Can I just use taste to tell if I might need malic acid? Like I said earlier this is my first attempt at making a cider.

    I have never made the recipe from the Clone Brews recipe book but they state that it is the Foreign Extra Stout recipe with ABV of 4.2%.

    To check the gravity I am using just a basic hydrometer. I have tested just plain water and it reads correct. As far as my yeast I used American Ale Wyeast Propagator. My original gravity was 1.050. Thanks for Replying
