What Have the Mississippi Homebrewers Been Up Too?

Howdy. Not super active on the forums, but I'll join in. Currently a Hattiesburg brewer, but should be back home in Pike County by the summer. I first brewed a few kit batches with a buddy about 15 years ago but it never took off. I started back brewing in 2008 and it's been downhill ever since...

    US-05 off flavors.

I personnaly didn't notice cloves when I sampled my beer. I did ferment at room temp, so I expected some esters, but the judges clove comment caught me off guard. US05 is one of my go-to yeasts.

    US-05 off flavors.

I just got my score sheets back from a homebrew contest held today, and my pale ale fermented with US05 was marked by one judge as "spicy, earthy clove, weizen smell". I was kind of shocked actually. I hadn't noticed it before.

    Planning a Bourbon Barrel Braggot

Right. I reckon I'm just having second thoughts on the D47 due to a recent stopped ferment on a sasafrass mead I just did. It was a dead stop. Vigorous initial fermentation, then blam. Nada. I tried several techniques and nothing. Just left it as it and racked to secondary. It should be fine...

    Planning a Bourbon Barrel Braggot

@ commonsenseman - I'm not a braggot expert either. I love drinking them though... ;) As for the recipe, yeah, I'm shooting big. I've worked several different brews up to comparable alcohol levels and they've all turned out pretty good. This braggot would be the most volume of high ABV stuff...

    Planning a Bourbon Barrel Braggot

Hello all. As the title suggests, I'm in the planning phase of a pretty big braggot that I plan on aging in my 2nd use bourbon barrel. The barrel currently has a collaborative, blended Imperial Stout sitting in it. (The stout is tasting dee-lish by the way). I was hoping to get a little...

    Re-Using Yeast and Lacto

I did this very same thing yesterday... Looking forward to the results. The lag time was a big long, but this morning, there was a nice thick head of krausen. The BW had a nice tartness to it. I'm hoping it will develop more in the bottle. We'll see how the gose turns out.

    CO2 Refills in Mississippi?

Thanks for the replies everyone. It's good to know your options. I actually own my own tank, so swapping wasn't an option. I should have mentioned that. One of my buddies got in touch with me and Nordan Smith in Hattiesburg can refill tanks. He get's his tank filled there but wasn't sure about...

    CO2 Refills in Mississippi?

Hello all. I searched through this forum and couldn't answer my own question. Anyone on here have any recommendations for getting a CO2 bottle filled in South Mississippi? I'm in Hattiesburg, so the closer the better, but I can drive if I have to. I bought a keg set up earlier this year and...

    Massive Strength Hard Cider

+1 for the thread resurrection. I read this thread a few weeks ago and I plan on attempting a batch of this monster as well. I planned on starting with a smaller gravity cider and step it up incrementally and take the yeast as far as they will go. I don't mind investing time into a project. I've...

    Making Cider with Belgian Yeast?

I've heard of Sophia and it's on my list to try. Your cider experiment sounds good. I'm gonna proceed ahead with my little experiment as well. I was planning on adding some brown sugar as well, and was even considering a "mini-graff" and steeping some Special B. I'll more than likely do a couple...

    Making Cider with Belgian Yeast?

I'm planning the same thing soon. I harvested the yeast cake from a Abbey Single I brewed and figured I'd play around and make a cider from it. I think the yeast would produce an interesting cider. If nothing else, it'd be a fun experiment.

    2.5 gallon glass carboys

Good enough man. Thanks for the info. I'll try and call them and get some info. Those sound sweet. Hopefully my buddy will be able to locate some for me. Cheers!

    2.5 gallon glass carboys

BadKarma, you said you picked these up at your local grocery? Where is your location? I assume SW Mo is Southwest Missouri, but I could be wrong. I have a buddy in Little Rock that's making a trip down to Mississippi to visit here soon and I asked him to look around for these in his area. I'm...

    Howto: Capture Wild Yeast

Hello all, long time lurker, first time posting. I'm a complete rookie / noob at wild and sour beers, but I've been intrigued by them beers for a while now, and this thread inspired me. I set out a jar of starter wort in late April, and it definitely caught something. The sample is cloudy as all...
