    No funkiness whatsoever. It tastes great. There is a bit of diactyl taste but that is from fermenting at 78-80 degrees (by accident). That flavor also mellowed as it conditioned and was gone by the second keg.

    Will do. I'll let you know how last week's brew come out in regards to FG. I'm also fermenting them at a much lower temp now that my garage is cold. They've been fermenting at 64 degrees.

    dbsmith- Those calculations make sense, and I too am skeptical that I am getting such high efficiency numbers. I use beersmith and calculate all of the water I need beforehand so that I don't end up with 13 Gallons of beer (of course its only a problem because my buckets can't hold enough)...

    Not too bad actually. The blonde I did came out amazing, light, crisp and clear. The pale got better with age, but I could definitely taste a small off-flavor from the high fermenting temp. Neither tasted thin though.

    I've been mashing on the higher side, around 155. My thermometer is a candy thermometer from my HBS. It seems quite accurate as it shows 212 when water boils. If I'm mashing high, wouldn't I have more unfermentable sugars leading toward a higher FG?

    I have been drinking a lot of it lately, and it has a very citrus/grapefruit aroma to it. My thought was that meant Simcoe or Cascade or a combo of both for the late additions and dry hop. Thoughts?
