    Just Luuuuuuuuuvv those blow outs!

LOL! This is the second time I came home from work to find a blow out! :D First time was with my 2nd batch of Cherry Wheat ale. I hadn't added the pureed cherries yet, so it was just the wheat ale fermenting. That was a case of me filling my fermentation bucket up too much. Heck of a mess to...

Watching the hops go round and round.....

You know, before this batch that I've got fermenting right now (Merlin's Ale), I've always had my brews in a orange plastic bucket. With this brew, I put it into one of my carboys. Watching the foam build up was fun, but I never really noticed, until tonight, the leave fragments from the hops...

I'm ready to kill my boss........!

Ever worked at a place that was just fine at first, but then down the line the boss starts to micromanage everything? It drives me up the wall! To the point where even comming home and having one of my homebrews still doesn't settle my nerves! We're a small business (all of 10 employees!)...

    Storing the wort?

Since I asked a question about liquid yeasts, it got me to thinking about something here: Normally I double and triple check to make sure I have all my ingredients. Then I go and forget something as simple as a net bag for my grains to steep in! Har har! But let's say that something goes...

What's the best way to pitch liquid yeast?

Hey guys! Just got all my ingredients to do Merlin's Ale, a receipe that I got from my Beer book. It looks like a nice light ale to guzzle without getting too slammed like most of my other batches would do to you if you did. Here's the ingredients: Gain Bill: 4 oz British 55L Crystal 1...

    Closer HBS

I really wish there was a closer Homebrew Store near me. I live in Aiken, SC, which is a sizeable town of about 38,000. We even have our own microbrewery in town. But right next door to us is Augusta, GA, much bigger place and I figured there would be a store there. Instead I have to either...

    not carbonating.....

So I've had my Golden Honey Ale bottled for 2 1/2 weeks now. Barely any carbonation at all! What caused this and how can I try to get it carbonated? I had almost a 4 gallon batch and used 5 oz of priming sugar. The bottles are sealed fine. The brew taste good, just pretty flat as there is...

    My Cherry Wheat Ale

Not having drank or made too many fruit or wheat beers, I decided to give this one for a try: Andy's Cherry Wheat Ale Yeast: Safale US-56 Grain Bill: 1.5 lbs Crystal Malt 90L (Uncrushed) Extracts: 3 lbs Barvaian Wheat DME 6 lbs Honey Hops: 0.5 oz Saaz - Pellets 0.5 oz...

    Primary Fermentation.......

Got ahold of some recipes from some different sites, some sound interesting, others good, others nasty, and still others sound like "Oh my god, I've GOT to make that!". Thing is, some of the recipes call for primary fermentation of only 3 to 4 days. Then rack to secondary for 14 days or so...

    Welcome Back Kotter.......

This is to Truble and the other guys I was chatting with on the thread that Dude had to close. Yah, yah, yah! Okay So I hit 40 next month! :( Actually I DO remember Welcome Back Kotter when I was a kid. Just don't keep small details like Epstien in my head! :D Actually remembering old...

    Strange Brews......

My father has been impressed with some of the brews I've made. He's mostly an American Pilsner fan, but willing to try my stuff too. I asked him to come up with some brews that he'd like me to make for him (other than just a plain ol' Pilsner). As usual, my father came up with a list of "Strange...

    How much fruit?

About how much fruit in general should you use during Secondary when making a fruit flavored beer? I'm talking pureed now. I know it will be different depending on your tastes, etc. But how many pounds per gallon are we talking in genneral?

    LOL! I'm becoming a fanatic!

Someone posted a "You know your a homebrewer if....." thread on here that cracked me up. The funny thing is, after only having started just a few months ago, and 5 batches later, I was able to answer "Yes" to a lot of them! But the kicker was this past friday night. I went out with my Dad to...

    Got the Wort Chiller made.....

Got to thinking seriously about this the other day. I've done 4 batches so far, either partial grain, or all extract and so far each has turned out great with no problems. The last 2 batches that are done are my American Pilsner and Carmel Cream Ale. Both came out clear as glass. Now I do get a...

    strawberry quick mead help!

After doing some beers, I decided to try a mead. With the long fermintation time of mead, it's no problem as I've got my beers to play with! :D So I picked one that sounded nice and easy to do, and got my wife to help with it. Pretty much it makes a one gallon batch. 3 lbs of honey, 4-5 lbs of...

    Beer Gysers!

Well, my chocolate ale has been in the bottle for about 4 days. Decided to crack one open and see how it tasted. Going in, the beer looks like a stout, but nowhere near as bitter. Now I DID ask a question about priming this ale, as I was worried about over carbination, and got told "No Problem...

    Priming Question

Took a sample of my Chocolate Cherry today to get a hydro reading. Beer has already been racked to secondary, for several days. Here's the thing. When I took the sample, it foamed up and gave me a beautiful brown head......... It's nice and flat in the carboy, no foam at all. Now I'm all set...

    Racked 2 brews and "WooHaaa!"

I racked my Chocolate Cherry and Carmel Cream today for secondary. I'd actually racked the Chocolate Cherry a couple of days ago, and it suddenly got active again. I tried my best not to stir it up too much, but some how I "Woke Up" the yeast, (it's Safeale US 56 in both batchs). So the Carmel...

    Old Kit question

Okay guys, got a good one for ya here. A friend of mine at work knows that I started to do some extract brewing. She's heard me talk about how it's not too hard, and how my first batch came out pretty good, and how I've now got different batches fermenting right now. Well she brings me this...

    Clarity Question

I know that you can add Irish Moss, Gypsum, etc, to your wort while it is boiling to help give your ale clarity. Is there anything that you can add to it during Secondary to help aid the clarity of your batch?
